No worries, I am not turning this into a food blog, but I thought I'd share something that has become a staple in the Maurer household this time of year - fresh pico. I was especially excited when I came home this afternoon to get a taste of the first batch I made last night and found that both Austin & Caleb - especially Austin - are fans. Almost all ingredients are straight from our garden which makes it even more tasty! The best part: it is soooo easy. Here's the recipe:
7 -8 medium sized tomatoes sliced
1 medium onion chopped
2-3 jalepenos sliced & deseeded (if you are looking for spicy, keep some of the seeds in)
1/3 bunch of cilantro leaves (or more if you like more)
squeeze of lime juice
Salt to taste - 2 - 3 TBSP (I like quite a bit)
Chop up all the veggies and cilantro and put in food processor. Process to desired texture. I like it a little chuncky. Add lime juice and salt. Marinate at least 3 hours - I recommend overnight.
Grab your favorite tortilla chips and ENJOY!!!
